The Process 124 is the reproduction of the craftsman baker's move and methods on an industrial scale, a real revolution which combines high technology and tradition.

Salt is necessary in bread making, however it is often used tomake up for a lack of taste. At BCS, the Process 124 permits to reveal all tastes and authentic bread flavours (paste hydratation, slow fermentation). So we respect AFFSA and PNNS advices on the decrease of salt rate. We put 1,8g for 100g (3,5274 oz) of flour.
